Ok, so the recipe specified a cake but being a working mother, with not much time to spare and lunch boxes to fill, who said that the recipe couldn’t be adapted into muffins instead?
A little jiggle with the baking time, adding muffin cases into a bun tin instead of lining sandwich tins and the White Chocolate and Beetroot Muffins were born!
The recipe was adapted with dark chocolate chips and a crunchy demarera sugar topping for beetroot chocolate muffins batch number 2.
They seem to have gone down well with the kids who played the ‘guess the ingredient’ game.
